Our Story
We're cooking delicious food since 1999
EST. 1999
Founded in 1999 as a Spanish restaurant, El Centro transformed in 2020 into a Latin American concept rooted in Guatemalan cuisine. The shift reflects the owners’ own story: Norma’s Guatemalan heritage and Radek’s gluten intolerance, which is why every dish on the menu is naturally gluten-free and built on corn. A selection of Spanish classics has remained on the menu, as they continue to be an essential part of our identity. The beginings of the restaurant were very humble, but as time went by it found it's strong position in the portfolio of Prague restaurants. One of its advantages is it's posision at the heart of Prague at the Lesser town just five minutes from Charles bridge. EL Centro, with it's carefully chosen selection of tasty tapas, renowned paella, soups and guatemalan specialities, became a place where people like to return.
Cooking Traditions
We offer you delicious, classic Latin cuisine – Hilachos, Mole
or Pepián, spanish Paella and Tapas. We have an enormous choice
of excellent Spanish wines, as well as carefully selected local
wines.
Latin cuisine is heavily influenced by regional
cuisines and the particular historical processes that shaped
culture and society in those territories. Geography and climate
had great influence on cooking methods and available
ingredients, and these particularities are still present in the
gastronomy of the various regions that make up the country.
Food Quality
Our chef – Consuelo Bermudez Fuentes - is selecting the most
authentic and fresh ingredients for your dish and she is

value in order, to deliver the best dishes to your table.
Every
meal is cooked with traditional ingredients.
